Simplified Ginger Duck

Ingredients
- Duck: 2 lbs
- Ginger: 100-200g
- Light soy sauce
- Dark soy sauce
- Rock sugar: A small handful
Instructions
- Rinse and chop the duck, then blanch in boiling water and drain.
- Peel and thinly slice the ginger.
- Heat oil, add ginger, and sauté gently until golden and fragrant.
- Add duck and cook on low heat to render its fat.
- Add both soy sauces, stirring to coat the duck.
- Add boiling water to cover the duck. Add rock sugar. Cover and simmer for 50-90 minutes until tender.
- Increase the heat and simmer until the sauce thickens slightly but still covers the bottom of the pot, making sure not to dry it out completely.
- Serve the duck and the sauce together.
