Pumpkin Rice

Ingredients:
- Pumpkin: 500g (unpeeled, cut into small chunks)
- Cooked rice: enough for three people
- Pork: a small piece (sliced thinly)
- Dried mushrooms: about 10 small-sized pieces
- Dried shrimp or shrimp skin: as needed
- Salt: to taste
- Feng He Garden First Extract Soy Sauce: to taste
- Green onion: 1 stalk (finely chopped)
- Garlic: 4-5 cloves (minced)
Instructions:
Step 1
- Keep the pumpkin unpeeled and cut into small chunks. Slice the pork thinly. Mince the garlic.
Step 2
- Heat a pan with a generous amount of oil. Add the minced garlic and white parts of the green onion. Stir-fry until fragrant and slightly crispy.
- Add the dried mushrooms and sauté until aromatic. Toss in the dried shrimp or shrimp skin and stir-fry briefly.
- Add the sliced pork and cook until it changes color. Then, add the pumpkin chunks and mix well.
Step 3
- Pour in 1 tablespoon of water, cover the pan, and simmer for about 5 minutes until the pumpkin is 80% cooked (tender but firm).
Step 4
- Add the cooked rice to the pan and season it with soy sauce and salt to taste. Stir everything together until evenly combined.
- Turn off the heat. Optionally, garnish with crushed peanuts and chopped green onion before serving.
