Simplified Ginger Duck

Ingredients

  • Duck: 2 lbs
  • Ginger: 100-200g
  • Light soy sauce
  • Dark soy sauce
  • Rock sugar: A small handful

Instructions

  1. Rinse and chop the duck, then blanch in boiling water and drain.
  2. Peel and thinly slice the ginger.
  3. Heat oil, add ginger, and sauté gently until golden and fragrant.
  4. Add duck and cook on low heat to render its fat.
  5. Add both soy sauces, stirring to coat the duck.
  6. Add boiling water to cover the duck. Add rock sugar. Cover and simmer for 50-90 minutes until tender.
  7. Increase the heat and simmer until the sauce thickens slightly but still covers the bottom of the pot, making sure not to dry it out completely.
  8. Serve the duck and the sauce together.
