Japanese Spinach Salad with Sesame Dressing

Make the Sauce:

  • Toast sesame seeds in a pan until fragrant (shaking constantly).
  • Grind the toasted seeds (mortar and pestle or food processor).
  • Mix the ground sesame seeds with soy sauce and sugar. Set aside.

Blanch the Spinach:

  • Bring water to a boil, add salt, and then blanch the spinach for 30-45 seconds (until stems soften).
  • Plunge the spinach into iced water to stop cooking and retain color.
  • Squeeze out excess water from the cooled spinach.

Assemble and Serve:

  • Cut the spinach into 1-inch pieces.
  • Toss the spinach with the prepared sesame sauce.
  • Enjoy at room temperature or chilled.
