Japanese Spinach Salad with Sesame Dressing

Make the Sauce:
- Toast sesame seeds in a pan until fragrant (shaking constantly).
- Grind the toasted seeds (mortar and pestle or food processor).
- Mix the ground sesame seeds with soy sauce and sugar. Set aside.
Blanch the Spinach:
- Bring water to a boil, add salt, and then blanch the spinach for 30-45 seconds (until stems soften).
- Plunge the spinach into iced water to stop cooking and retain color.
- Squeeze out excess water from the cooled spinach.
Assemble and Serve:
- Cut the spinach into 1-inch pieces.
- Toss the spinach with the prepared sesame sauce.
- Enjoy at room temperature or chilled.
