Gongjin Exploded Eggs

Ingredients:

  • 5 Large, Fresh Eggs
  • 35 ml Feng He Garden First Extract Soy Sauce
  • 20 ml Feng He Garden Dark Soy Sauce
  • 20 ml Feng He Garden Black Vinegar
  • 6 ml Fine Sugar
  • 4 cloves of garlic, thinly sliced

Method:

  1. Prep Glaze: Whisk Feng He Garden First Extract Soy Sauce, Dark Soy, Black Vinegar, and sugar until dissolved.
  2. Crisp Garlic: Fry the garlic in a bit of oil until golden; remove and set aside to keep it crispy.
  3. Flash Fry: Sear 5 eggs in a hot pan until the edges are lacy and the yolks are raw.
  4. Glaze: Pour the glaze around the side of the pan; let it bubble and thicken for 15–20 seconds.
  5. Serve: Plate over rice, top with garlic, and serve.
