Braised Chicken with Mushrooms

Ingredients:
- 500g chicken
- 15–20g dried shiitake mushrooms (rehydrated)
- 3–4 slices fresh ginger
- 2–3 red chilies (sliced)
- A small bunch of cilantro (for garnish)
- 2 tbsp Feng He Garden First Extract Soy Sauce
- 1 tbsp Feng He Garden Dark Soy Sauce
- 2 tbsp cooking wine (rice or Shaoxing wine)
- ½ tsp salt
- 1 tsp sugar
- 2 tbsp cooking oil
- 1 cup (250ml) water
Steps:
- Soak Mushrooms: Soak dried shiitake mushrooms in warm water until tender. Squeeze out excess water and cut them in half.
- Marinate Chicken: Rinse chicken pieces and marinate with a little cooking wine and salt for 10 minutes.
- Sauté Chicken: Heat oil in a pan, add ginger slices to sauté until fragrant. Add chicken pieces and stir-fry until they turn slightly golden. Remove and set aside.
- Braise for Flavor: Leave some oil in the pan, add mushrooms, and stir-fry. Season with soy sauce, dark soy sauce, and a little sugar. Put the chicken back into the pan, and add enough water to cover the ingredients. Bring to a boil over high heat, then reduce the heat to low and braise for 20 minutes.
- Thicken the Sauce and Serve: Turn the heat to high to reduce the sauce until it becomes thick. Add red chili rings and stir-fry for a while. Finally, sprinkle with cilantro and serve.
